Spicy Thai Beef

Tonight was Spicy Thai Beef with Jasmine rice night!  We’ve made this before (probably last week) and it was delish, so we had it once again.  This recipe comes from Gina’s recipe page – LOVE! It requires a little bit of chopping, so I thought it best to have on a rest day from running.  I have a “prepper” (thanks, Brett!), so he chopped all of this.

Onions, garlic, green onions, carrots, red bell pepper & cilantro (not yet chopped -need a bigger board!) and the rest of the ingredients are posing in the background (soy sauce, red pepper flakes, fish sauce and jasmine rice).

I feel like posting some step-by-step photos, so here are the initial ingredients simmering – 3/4 lb of lean ground beef, onions, garlic, green onions, red pepper flakes and a lil’ soy sauce.

Then we added the rest of the stuff (plus 2 cups of water).  Looks like a ton of carrots, but I like them and they don’t overtake the dish.

While this was simmering, we each enjoyed a glass of Blue Moon…in a Saint Arnold glass (hello, dirty window!).

Aaaand here’s what it looked like on my plate.  Once again, Brett added a little greenery for decorative purposes –  mmm, cilantro!

Now it is Wednesday, which is W1D3 of Couch25K.  I will probably update tomorrow with my time, distance, etc. instead of tonight.  I’m ready to get back out there!
